I have always been a sucker for laughing cow cheese. It's one of my go-to snacks. They go great on just about anything: carrots, crackers, pretzels, apples.

When I first saw this Alfredo sauce recipe that was made with Laughing Cow Cheese popping up online, I knew immediately that I had to give it a try. And let me tell you, it was absolutely delicious!

My family goes crazy for pasta dinners. My husband is a traditional red sauce or spaghetti kind of guy. But, I've always been more of a white sauce kind of gal. I am a sucker for Alfredo, but let's just say my waistline is not as big of a fan of the rich and creamy sauce.

Lucky for me, Laughing Cow Alfredo Sauce is much lighter and healthier than a traditional Alfredo sauce, without sacrificing the creamy and delicious flavor that I love!

So many times when things are "healthy" they lack the flavor and richness of the original, but that is so not the case with this pasta sauce. With Laughing Cow already being so creamy and delicious, including a variety of cheeses, it has so much flavor alone. When added to the sauce ingredients it only gets better.

To keep it extra healthy, I like to serve the sauce over top of whole grain noodles and have a side salad full of veggies as well. It's the perfect diet-friendly pasta night that my whole family loves.

WHAT IS LAUGHING COW ALFREDO SAUCE?

Laughing Cow Alfredo sauce is a spin on a classic Alfredo sauce recipe.

It's made using Laughing Cow Light Swiss cheese wedges.

This gives the sauce a cheesy and creamy flavor but because it's made with the Laughing Cow cheese, it's much healthier and lighter than a traditional Alfredo sauce.

Mixed in with the cheese wedges are fat-free milk, a bit of butter, and loads of seasonings and spices for great flavor!

It's so easy to whip together for a delicious dinner.

LAUGHING COW ALFREDO SAUCE INGREDIENTS

Putting this Alfredo sauce together is really easy and it doesn't require too many ingredients that you wouldn't likely have in the cupboards. The base is the Laughing Cow cheese wedges and skim milk. Then, just add your spices and seasonings and you are ready to go!

Here is what you'll need for Laughing Cow Alfredo sauce:

  • fat-free milk
  • Laughing Cow Light Swiss Cheese Wedges
  • garlic
  • yellow onion
  • garlic powder
  • onion powder
  • ground black pepper
  •  salt
  • butter (light heart-healthy butter spread)
  • cornstarch
  • freeze-dried chives (or fresh would work too)

HOW TO MAKE LAUGHING COW ALFREDO SAUCE

First, in a medium sauce pan, melt your butter and add your garlic and onion powders. Then, cook these together until the butter is soft.

Next, pour in your skim milk and stir it all together well. Make sure to use fat-free milk to keep the recipe light and healthy.

Add your Laughing Cow Cheese Wedges, garlic powder, onion powder, black pepper, and salt. It helps if you cut the Laughing Cow wedges into little pieces. Otherwise, it won't melt as quickly or evenly.  Make sure to stir the mixture well and frequently.

Let your mixture cook for about 15 minutes and use a fork or spoon to make sure that your cheese is breaking up while cooking. The laughing cow cheese seriously adds the best and most delicious texture into this Alfredo sauce. You will not be disappointed!

Using a sifter (or you could mix it with a bit of water first) add your cornstarch to your liquid and stir well. Bring the sauce to a boil and then turn down and let simmer for an additional 5 minutes.

Add your chives and serve over pasta of your choice. I like to serve it over a whole grain pasta!

I also love to add some protein to this. Sometimes I will grill up some chicken to put over the top or if I'm feeling fancy I will sauté up some shrimp! It's a nice addition.

HOW TO STORE LAUGHING COW ALFREDO SAUCE

It's likely that you won't have leftovers of this delicious sauce! But if you do, it can be stored like any other leftover sauce in a sealed container in the fridge. I like to store it in a glass container because it makes for easier reheating.

When reheating, you can pop it in the microwave, or transfer the leftovers to a saucepan and heat it on low over the stove-top. I find it reheats a bit more evenly if I do so on the stove-top.

  • 1 cup of fat free milk
  • 6 wedges of Laughing Cow Light Swiss Cheese Wedges cut up into little pieces
  • 2 cloves of garlic minced
  • ¼ of a yellow onion chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon salt
  • 1 tablespoon Smart Balance Butter or light heart healthy butter spread
  • 1 teaspoon cornstarch
  • 1 tablespoon freeze dried chives or fresh would work too
  • In a medium sauce pan melt your butter and add your garlic and onion and cook until soft.
